Preheat oven to 350 degrees F
In a large mixing bowl, combine almond meal, coconut flour and dried herbs
In a separate bowl, mix together pumpkin purée, egg, oil, minced garlic, diced kale (or other recommended vegetable) and 1/4 cup of the filtered water (or bone broth)
Add wet to dry ingredients and stir well, adding a bit more liquid if mixture is too thick and crumbly to roll
Work the mixture with your hands
Roll dough into balls and flatten onto a cookie sheet lined with parchment paper.
Bake for 55-60 minutes or until firm
Turn off oven but keep cookies in the closed oven as they are cooling (30-40 minutes)
Remove cookies from oven and let cookies cool completely (about one hour)
